Born “Gold Murako” Junmai Daiginjo Sake By Katoukichibee Shouten

Katoukichibee Shouten is a sake brewer in Fukui prefecture, in the historic city of Sabae near Kyoto. Since its establishment in 1807, the brewery has been producing high-quality sake using traditional processes. It is now run by the eleventh generation of brewers, which is just amazing.
“Born,” which translates as purity, is one of Katoukichibee Shouten’s flagship products. Atsuhide KATO, the runner of the brewery, named this sake after various historical facts about the brewery’s strong belief in second chances and karmic rewards for hard work. It represents the brewery’s firm commitment to making improvements in exchange for incentives for a hard effort. During the Showa (Shouten) era, the Emperor used “Born” sake as Japan’s representative brand for ceremonies, festivals, and guests.
We should look into Atsuhide KATO’s life to completely comprehend their belief in producing high-quality sake. He was born prematurely after his baby sibling died. As a result, his parents lavished him with care. It’s a sake based on his values and life path. Ironically, Atsuhide’s father became chairman of the Sake Brewers Association, which was established at the same time. When Atsuhide Kato inherited this historic brewery in the 1950s, he was just 18 years old. Now “Born” is centered on the image of purity for all customers worldwide. Thus, Atsuhide Kato, KLBD Kosher certified Born to signify the brew’s natural creation. Today, not just “Born,” but all sakes thrive because Yamadanishki, the king of all Sake rice, reigns to produce the most extraordinary translucent brews in the world!
First of all, it is a Junmai Sake (no brewer’s special alcohol added) and Daijingo, the polishing ratio, which for this sake is 38 percent. This is a Sake that should be enjoyed by drinking from a wine glass. All the exquisite nuances appear to lure you with the fragrances of fresh spring rain. The sake is a pale gold color with a somewhat cloudy core. It is pasteurized once, which means it has a mouth-filling texture of ripe powerful orchard fruit, Anjou pears, apple butter, blood orange, crushed kiwi core, vanilla beans, sweet, pickled ginger, and almond marzipan with an exceptionally dry finish!
According to the producer’s notes, it’s a sake that should be refrigerated before drinking. This sake is so sophisticated, in my opinion, that it can be savored as a new sake at three different temperatures: chilled to exhibit a delicate fragrance, room temperature to eat bar food, and slightly warm to cozy up to a fireplace while enjoying a delicate slice of wagyu beef.
This is one of my favorite sake brands. I discovered this gem for $ 28 US dollars with Uncle Sam Tax at Hi Time Wine Cellars in Costa Mesa, California.
